“As we continue to pursue wine grapes that exhibit the best varietal expression, I am pleased to introduce our 2021 Paso Robles Cabernet. At the harvest of 2021, we had an opportunity to acquire Cabernet fruit from the well-respected Paso Robles region, so we enthusiastically took advantage of this source. As one who enjoys beef, I suggest a food pairing with a smokey character such as a simple cut on the barbecue or a peppercorn steak which will underscore this wine’s bright fruit quality.”
AROMATICS & FLAVORS
A red velvet hue sets the tone for a plush and lively Cabernet Sauvignon. Aromas of carnations, hard cherry candy and a slight minty note, lead into a round and luscious mouth-feel. Red fruit flavors of raspberry and royal cherry along with some baking spice, evoke a whiff of fresh and warm berry pastry.
VINTAGE
The 2021 vintage had a relatively temperate growing season putting the harvest behind by about two weeks. Add on-going drought conditions, and Cabernet Sauvignon vines produced smaller, more concentrated fruit with lower yields. The conditions produced expansive flavors and manageable tannins.
FERMENTATION & AGING
Handpicked, crushed, and fermented in small fermentation tanks. Aged in American oak barrels.
VINEYARDS
As California’s largest geographic appellation, the Paso Robles AVA contains a greater day-to-night temperature swing than any other in the state. It has distinct meso-climates, diverse soils, and a long growing season. Cabernet Sauvignon and Bordeaux-style blends are a staple in the vineyards of this renowned appellation.
